One of our interns, Miriam, really wanted Jajean and I to try "chiles en nogada," one of the most famous Mexican dishes originated in Puebla. So she prepared us her family's recipe for chiles en nogada. And it was AMAZING! God, she is a good cook... In fact, they have been the best chiles en nogada I have tried yet. But what are chiles en nogada? They are poblano peppers stuffed with fruit and a little bit of meat, battered and fried, and covered with a nut sauce, pomegranates and fresh parsley. They are served with bread (so you can eat the extra sauce on your plate) and sparkling apple cider (to enhance the fruity flavors). Sigh. God, it was good!
