Mexican chorizo is made from fresh pork as a sausage that combines coarsely chopped or ground pork meat, chili peppers and some spices. The sausages are neither cooked nor otherwise treated, so it can’t be eaten raw. Instead, it is usually grilled or mixed in with other foods. (Huevos con chorizo, essentially scrambled eggs with chorizo, for example is a very common breakfast dish.) There are multiple ways of preparing chorizo and different regions have different styles. While most varieties of chorizo are red (due to the use of chile ancho and tomatoes), there is a green chorizo, chorizo verde.
