Mercado Benito Juarez has a large food ingredient section including many types of mole powder. Mole powder is a convenient way to add all the flavours of mole as one ingredient. This convenience is useful as moles are notorious for having a high number of constituent spices. Some early mole recipes had as many as 100 ingredients. In Mexico, the term is used for a number of sauces, some quite dissimilar, including black, red/colorado, yellow, green, almendrado, de olla, huaxmole, guacamole, and pipián. Generally, a mole sauce contains a fruit, chili pepper, nut, and such spices as black pepper, cinnamon, cumin, and chocolate.
